Presumably he would be able to bring you back the same moment you left, so why worry about leaving your whole life behind? Of course, I'd probably get killed and eaten immediately, so maybe not.
Because that worked so well for Rose that one time. It seems to me I'd have to operate under the assumption that I wouldn't be able to time travel right back to the moment I left home and pick up like nothing happened. It just never seems to work out like that.
